Giving Thanks

Thanksgiving is traditionally a time of gratitude, a special holiday that offers an entire day to reflect on all we have to be thankful for.

I am reminded that life is so precious and fleeting. All of our lives get so busy, yet how important it is to make time to connect with the people that are important to us.

Even if we don't speak regularly, this newsletter is my chance to stay in touch with you. My intention is to share thoughts of support and nourishment for well-being, and hope that some of what I share will hold value for you.

For me, it is the gift of family and friends that are the riches in my life. Those precious times that we hold dear to our heart, and memories that can never be replaced by time nor all the wealth in the world.

Whether you have planned a grand feast, an intimate candlelit dinner for two, or simple Chinese take-out, it is not really about the food, but rather who we share it with that counts.

I give thanks for all of you. You have touched my life in so many different ways, and for this I have the deepest gratitude.

A Healthier Sweet for the Holidays

We all know that sugar is a general nutritional hazard contributing to many health problems. And for those of you who are addicted to Splenda, just a reminder that Splenda contains many toxic chemicals including chlorine ~ scary!

Until I was introduced to Xylitol I had not come across any alternative that actually tasted good and is good for you!

It sounds like a chemical, but Xylitol is a naturally occurring sugar derived from birch trees and corn cobs that contains 40% less calories than sugar. It is very low on the glycemic index, so it's safe for diabetics and has been proven to have great anti-bacterial properties for medical and dental use. It actually helps prevent cavities!

You can find it at health food stores. It looks and tastes just like sugar with no strange aftertaste. Perfect for all your holiday baking!


Stuffed Acorn Squash - A Traditional Hippie Favorite!
Serves 2 as a main dish, 4 as a side dish.

1 medium Acorn Squash
1/2 cup Panko Breadcrumbs
1 Tbs. Olive Oil
1/2 cup Onion, finely chopped
1/2 cup Celery, finely chopped
1 Garlic Clove, minced
1 cup Brown Rice, cooked
1/4 cup Raisins or Dried Cranberries
1/3 cup toasted Walnuts or Pecans, chopped
1/2 cup Vegetable Broth
Salt and Pepper to taste
1/2 tsp. rubbed Sage

  1. Preheat oven to 400 degrees. Cut squash in half lengthwise and spoon out seeds.
  2. Heat olive oil in skillet over medium heat. Add onion and celery, cooking until onion is translucent. Add garlic towards end, so it doesn't burn.
  3. Remove from heat and stir in crumbs, rice, raisins, nuts and broth.
  4. Season mixture with salt, pepper and sage.
  5. Place squash in baking dish, slicing a thin slice off the bottoms if need be, to sit up straight in dish.
  6. Fill with mixture. Cover with foil and bake 1 to 1 1/4 hours, or until squash is tender when pierced with the tip of a knife.
