Being Vs. Doing
There is an old favorite saying, "We are human beings, not human doings," that always comes to mind and makes me smile when I am feeling overwhelmed with busyness.
This is a culture of wanting it all, always looking forward, striving to live optimally and improving ourselves through achievements. In doing so, however, it can become more difficult to look around and appreciate the here and now.
We can forget how important it is to take pleasures in the simple joys of existence, like clear blue skies, birds singing, and gentle breezes on bare skin. You may feel like you are too busy too revel in the small stuff, but your future will wait for you, and there will always be another responsibility on the horizon.
If you are truly scheduled down to the minute, give yourself permission to shake off some unimportant commitments so you can focus on what is vital. Give up control for a few minutes or an hour to take a walk in an unfamiliar place, look at the clouds, consciously taking in all the sights and sounds of the season. This may not feel like an essential part of your grand plans or a waste of time. But don't forget that this time of true being is what can fuel deep inspiration and renewal from Source.
Perhaps, take pause to ponder, "Who am I without my goals, projects, and achievements?" The answer may surprise you.
Next time you find yourself overwhelmed with goals and self improvement, don't forget to just live!

Summer Skin Myths - Part 1
Myth #1 All sun damage to skin happens before 18 years of age.
Truth - Sun damage continues to occur throughout the life, it is never too late to protect your skin.
Myth #2 The higher the SPF factor rating, the better.
Truth - A higher SPF gives a false sense of security and introduces more potentially harmful chemicals to the body. For example, an SPF of 50 is only marginally more protective than an SPF of 15; an SPF of 30 has only 2% more protection than an SPF of 15. No matter what the level, sunscreens need to be reapplied every 90-120 minutes.
Myth #3 Get a base tan to prevent burning before going on vacation.
Truth - Consider that any tan is actually a scar from skin damage. There is no such thing as a healthy safe tan. Self tanners are the safest way to obtain a bronze glow.
Artichoke and Spinach Pie
Everyone loves artichokes! Simple and delicious.
1 unbaked Pie Crust (may be made without crust if desired)
1 clove minced Garlic
2 Tbs. Olive Oil
1 12 oz. jar marinated Artichokes, drained
1 pkg. Baby Spinach
1/2 cup grated Parmesan Cheese
5 eggs
16 oz. container Cottage Cheese
1/4 cup chopped Parsley
Salt, Pepper to taste
1/4 tsp. Nutmeg
- Preheat oven to 375 degrees. Use deep dish 9 inch pie pan.
Spread cheese on bottom of pie crust.
- Saute garlic in oil gently. Add in spinach until just wilted. After wilting spinach, press excess water out before adding to crust
- Spread spinach mixture on top of cheese, followed by artichokes and parsley.
- In large bowl, beat eggs with cottage cheese, salt, pepper nutmeg and parsley.
- Pour egg mixture into pan and dust with paprika.
- Bake 45-50 minutes till nicely set.
