It's All About the Little Things
Life is full of
the little wonders that make us happy. The inspirational sound of a
favorite song, an uplifting book, a beautiful sunset, the warmth
from a cup of hot tea are simple pleasures that can put a smile on
our faces. These "little things" are easily accessible to us and
can be sources for finding happiness within. A key to doing this is
taking the time to put on those rose colored glasses left from
childhood so that you can easily find the joy in those "little
things."
To be able to
observe the natural beauty of life that is always around us, is to
open to another level of grace and gratitude. As we begin
rediscovering these little things, we naturally want to share this
joy with others. We may even think of things we can do to make other
people happy, which in turn makes us happy all over again.
There is an
endless supply of little things and moments that can instill joy.
All we have to do is look for them and, they'll magically start to
appear.

Apple
Walnut Salad with Cranberry Vinaigrette...
This is a simple green salad, but the dressing is what makes it!
Just to note that it will be on the thick side. You may add water as
desired to thin.
1/2 cup chopped Walnuts
1/2 cup Craisins or fresh Cranberries
1/4 cup Balsamic Vinegar
1/4 cup Apple Cider Vinegar
2 Tbs. Sugar, may need to adjust if using fresh cranberries
1 Tbs Dijon Mustard
1/2 cup Olive Oil
Salt and Pepper to taste
10 cups Salad Greens
2 Apples, chopped
1/3 cup thinly sliced Red Onions if desired
- Preheat oven to 350 degrees, bake walnuts on baking sheet 8 to
10 minutes, or until lightly browned.
- In a food processor or blender, combine the cranberries,
vinegar, sugar and mustard. Puree until smooth, gradually add oil,
and season with salt and pepper.
- In a salad bowl, toss together the greens, apples, onions and
enough of the cranberry mixture to coat. Sprinkle with walnuts and
serve.
