Warmth and Renewal
Our memories of summer are often intense because it is a season
blessed with a vividness unsurpassed by any other time of year. Our
senses are delighted by bright colors, fresh scents, vibrant flavors
of local produce and brilliant sunlight.
Our day-to-day circumstances may not change as spring turns into
summer, yet we nonetheless feel refreshed. Our burdens feel lighter,
and we feel drawn to play, relax, to travel and experience all of
life's joys to their fullest extent during extended sunlit hours.
Summer is also a wonderful opportunity to reacquaint yourself
with the practice of being in the present moment. Try taking a walk
in a favorite place and allowing yourself to let go of your usual
thoughts and concerns. Instead, try for ten minutes to immerse
yourself and breathe in the surrounding pleasures, the sights and
sounds. Feeling the warm breeze, hearing the birds and smelling the
sweet aromas.
The season will pass quickly, but while it remains, you can revel
in the richness of life and renew yourself in the wonder of the
light.

The Fountain of Youth?
Imagine what happens to a plant when it goes without water for
too long. It begins to droop, then it becomes dry and brittle.
Watering the plant may bring it back, but it will likely have
damaged leaves.
Water works similarly within people. By drinking water, you
moisturize your skin from the inside out, helping to maintain its
elasticity and suppleness - less drooping, drying and damage.

Cucumbers
- Summer Skin Savers!
Fresh, crunchy cucumbers are not only low in calories and high in
fiber - they're also full of vitamins, minerals, and antioxidants
that can feed your complexion inside and out.
Refresh and protect. Cucumbers contain vitamin C and caffeic
acid, two antioxidants that when applied to the skin, help fend off
wrinkles, sun damage and more. Vitamin C builds collagen and elastin,
protein fibers that give skin its youthful plumpness. Caffeic acid
inhibits cancer cells and protects skin cells exposed to UV
radiation.
It's no wonder many spas offer hydrating treatments made of
crushed cucumber.
Here's a home version for kitchen divas:
In a blender, barely puree half a cucumber and 2-3 tablespoons of
plain yogurt - it should be thick, not drippy. Pat all over your
face and neck, sit back for about 15 minutes, then rinse and relish
how good your skin feels.
Deflate puffy peepers. Chilled cucumber slices act like
delicate mini ice packs, relieving puffy eyes. Their cold and
natural astringent quality minimizes the swelling by constricting
the blood and lymph vessels that bring fluid to the eye area. Try
using these with your cucumber masque!
Spicy Cucumber Salad with Peanuts
This is a crunchy Thai-inspired salad with a lovely balance of
sweet and spicy.
4 cups English Cucumbers, peeled and sliced
1/2 cup Rice Vinegar
1/2 cup Water
3 Tbs. Sugar or Xylitol
1/4 tsp. crushed Red Pepper
2 Tbs. minced Red Onion
1 Tbs. or to taste, chopped dry-roasted Peanuts
- Combine vinegar, water, sugar and pepper in a small saucepan.
- Bring to a boil.
- Reduce heat; cook until reduced to 1/3 cup (about 10 minutes).
- Remove vinegar reduction from heat; cool.
- Stir in onion.
- Combine cucumbers and vinegar reduction in a medium bowl; toss
well.
- Sprinkle with peanuts.
