No, you don't have to live like a vampire, but taking a few precautions in the sun will help keep your skin healthy and keep the unwanted spots and lines at bay. So enjoy the beautiful weather but please be mindful of protection as skin cancer is on the rise... You will thank me when everyone thinks you are younger than you are!

Sun Protection with Style!

As many of you know, using sunscreen is great, but it only prevents burning. It does not prevent skin aging or help guard against skin cancer.

The Skinny on Nut Butters

Virtually all nut butters share the stellar nutritional profile of peanut butter. Nut butters are loaded with vitamin E, fiber, magnesium, zinc, iron and heart healthy omega-3 fatty acids, which help thin blood and prevent platelets from clotting and sticking to arterial walls. So it's no wonder that research shows that eating nuts reduces the risk of heart disease.

Nut butters are touted for energy production, hormonal balance and anti-aging properties. New research from Harvard has also focused on their beneficial impact on balancing blood sugar and prevention of type 2 diabetes.

Despite their high calorie and fat content, research has consistently shown that nuts (and their butters) do not contribute to weight gain. In fact, the same Harvard study also found that women who consumed more nuts and butters had a lower body mass than those who abstained from nuts.

Nuts may assist in weight loss because they help you feel full longer. Just be mindful of portion size and enjoy!


Tofu/Broccoli Stir-Fry with Cashews

This is great over brown rice or Asian noodles. To toast the cashews, spread on a baking sheet and cook in a 350 degree oven about ten minutes.

1 package firm Tofu (you may use chicken if you prefer)
1 1/2 pounds Broccoli trimmed and cut in bite size pieces
3/4 cups Water
juice of one Orange
2 Tbs. Vegetable Oil
3 Tbs. Soy Sauce
2 Tbs. Rice Vinegar
1 Tbs. Sugar or Honey
3/4 tsp. Red Pepper flakes
4 Garlic Cloves, minced
1 Tbs. Cornstarch
1/2 cup Cashews, toasted

1. Cut Tofu in squares, lay on second baking sheet and bake at same time with Cashews to firm consistency.
2. Meanwhile, steam Broccoli until cooked half way, kind of crisp.
3. Whisk together Water, Orange Juice, Vegetable Oil, Soy Sauce, Rice Vinegar, Sugar, Red Pepper, Garlic and Cornstarch.
4. Heat large skillet, pour in sauce, Tofu and Broccoli and simmer until Broccoli is cooked as desired. Serve topped with Cashews.
