Coo-Coo for Coconut

Did you know that coconut oil has numerous healing benefits for the hair and skin? Try a tablespoon in your bath. Rub into chapped hands at night, they will feel like butter in the morning. For deep conditioning, massage into hair and leave overnight.

Ten Skin-Saving Tips

  1. Turn Your Home Into The Tropics; Invest in a quality humidifier for your bedroom. I love the Venta, www.Venta-Ariwasher.com. No gross filters to change. It cleans and humidifies without steam and is well worth the investment. You can also find them at Bed, Bath and Beyond.

  2. Guzzle Water Like A Fish; This ubiquitous bit of advice is right on the money at any time of year. Replenishing your body with H2O gives you more energy, benefits your overall health, and will also help your skin from becoming dehydrated. Aim for at least 8 glasses a day, and remember to grab a bottle to take along anytime you leave the house. Hot herbal tea is a great alternative when the weather is cold.

  3. Don't Forget To Exfoliate; Keep a gentle body scrub and a less abrasive facial exfoliant in the shower and remember to use them both 2-3 times a week. This gets rid of built-up dead skin cells and exposes a fresh layer of skin ready to absorb all the moisturizer you're going to apply when you step out of the tub.

  4. Moisturize, And Then Moisturize Some More; Keep a small container with you to reapply to hands that get dry so easily. I love Soy Shea Body Butter for super healing and protection for hands and feet.

  5. Supplement With Fish Oil Daily; Make sure you use only the highest quality, that has been tested free of mercury and other pollutants. I use and recommend Nordic Naturals blend with Borage Oil. Great for eczema, dry skin and of course heart health as well!

  6. Take Oil-Infused Baths Instead of Hot Showers; This may not be practical for rushed morning when you're on the way to work, but a soak in a warm bath amply infused with coconut oil (read Coo-Coo for Coconut) is a soothing and skin-nourishing way to end the day. Add a few drops of essential oil such as lavender or ylang ylang for an even more relaxing treat. As a wise Mae West once said, "When in doubt, take a bath."

  7. Don't Skip The Sunblock; Just because the sun isn't shining as bright as during the summer, doesn't mean it can't prematurely age your skin. Applying sunblock or at least using Mineral Makeup should be a part of your daily routine all year long.

  8. Skip The Blow-Dry; Your hair will be healthier if you skip the 10-20 minute blast of hot air every morning. Try a wavy, tousled style or a loose bun for a change.

  9. Wear Nature-Fiber Clothing; Synthetic fabrics and wools can be very irritating to dry skin. If you need to wear wool to keep warm, wear a soft cotton shirt underneath as a buffer.

  10. Stop Licking Your Lips; We've all been guilty of this, when our lips feel dry, we lick them. Of course this just leaves them more chapped! Keep some lip balm with you at all times. In a pinch you can also apply it to chapped hands, cuticles, and overblown noses.


Low Fat Chocolate Bundt Cake

Indulge yourself without guilt!
Low on calories, but rich on taste, this is a vegan recipe with no dairy or eggs.

1 3/4 cups freshly brewed Coffee
2/3 cup Cocoa
1 1/2 cups Sugar
1/3 cup Canola oil
1/3 cup Applesauce
1/4 cup Cornstarch
2 tsp. Vanilla extract
1 tsp. Almond extract
2 cups Whole Wheat Pastry Flour or all purpose Flour*
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Salt

  1. Preheat over to 325 degrees. Grease and flour an 8-10 inch Bundt pan.
  2. Over medium heat, bring the coffee to a simmer in saucepan. Lower heat and whisk in cocoa until dissolved. Remove from heat and set aside to bring to room temperature.
  3. In a bowl, whisk together the sugar, oil, applesauce and cornstarch until the sugar and cornstarch are dissolved, about 2 minutes. Mix in the extracts. Mix in cooled chocolate mixture.
  4. Sift in the flour, baking soda, powder and salt. Beat until relatively smooth, about 1 minute with a hand mixer or 2 minutes with a whisk.
  5. Pour batter into pan and bake 45-55 minutes, depending on pan size. A toothpick or knife should come out clean.
  6. Let cool, then invert onto serving plate and sprinkle with powdered sugar if desired.

*If you can't find whole wheat pastry flour, then regular all-purpose will do. Regular whole wheat flour will result in a rough and chewy texture.
