Artichoke Bruschetta
A fun and easy appetizer for watching the super bowl, this is a great bruschetta recipe based on an artichoke dip. Always a huge hit!

1 (6.5 oz) jar marinated Artichoke Heart, drained and chopped
1/2 cup Romano or Parmesan Cheese
1/4 cup Red Onion, finely chopped
1 Garlic clove, minced
1 Tbs. Mayonnaise
1 French Baguette, cut into 1/3 slices, toasted

Directions:

  1. Preheat the broiler.

  2. In a medium bowl, mix artichoke hearts, cheese, onion, garlic and mayonnaise. Top sliced bread with mixture. Arrange slices in a single layer on a large baking sheet.

  3. Broil in oven 2 minutes, or until topping is bubbly and slightly browned.
