Try this ancient grain, (Pronounced Keen-wa), for a nice change from
rice. It contains a lot more protein. You may have to find it at
health food stores or Trader Joe's.
1 cup quinoa
1 small onion, finely chopped
1 tbs. Olive oil
1 tsp. Cumin
1/2 tsp. Cinnamon
1/4 tsp. Turmeric
1 cup vegetable broth
2/3 cup water
1/3 cup dried currants
1 tomato diced
salt to taste
3 tbs. Chopped parsley
In a saucepan, cook the onion in the oil till softened.
Add the cumin, cinnamon and turmeric; cook and stir for about 30
seconds.
Add the quinoa; cook and stir for about one minute.
Add the broth, water. currants, tomatoes and salt; cover and simmer
for 15 minutes, or until liquid is absorbed.
Remove pan from the heat; allow mixture to stand covered for about 5
minutes.
Add the
parsley.
Enjoy hot or cold! |
